In 1928, a Gujarati spice factor and a Javanese harbor cook shared a single charcoal burner behind Kali Besar. They found that cracked Malabar black pepper and roasted Candlenuts belonged in the very same claypot.

Today, the third generation still kneads every naan by hand, marinates lamb shoulder in raw papaya and yogurt for twenty hours, and stirs our black dal with seasoned teak oars.
